As you mentioned solar, I would probably opt for a standing seam metal roof that the panels could clip directly to. The lighter the color the better / look into cool roof products.

I would suggest you coat it with Vermont Natural Coatings. They made extremely low VOC finishes for wood products. Their exterior wood sealant should work very well on this.

In my experience it is only if you stick to certain colors. Once you use any darker or richer colors, their tint contains VOCs. Consider using Mythic paint instead. It is a true VOC free paint...
