What very low VOC sealant will protect quarter sawn white oak doors without changing the color or natural beauty of the wood?

These custom, very thick, FSC certified, new white oak doors are being used throughout a house we have under construction. Doors are inside doors and entry doors. All samples we have tried darken, homogenize, amber, add reflectivity, or otherwise detract from the wood.

Vermont Natural Coatings. It is unlikely to avoid any change in color. Beeswax or Linseed Oil are also natural alternatives but both will likely affect color.
